Ingredients

  • 8 oz (225 g)pasta of your choice (penne, rotini, fusilli, shells, etc.)
  • 1 tablespoonoil
  • 4-5garlic cloves, minced
  • ½medium onion, diced
  • 2-3 cupsvegetables of your choice, chopped
  • 2½-3 cupswater or vegetable broth (enough to just cover the pasta)

  • 1 teaspoonItalian seasoning
  • ½ teaspoonblack pepper

  • 1-1½ cupsmarinara sauce

Notes & Tips

    • One-pot pasta is an easy weeknight meal that comes together with minimal dishes and is perfect for using up vegetables in your refrigerator.
    • Add quick-cooking vegetables like spinach during the last few minutes of cooking so they stay vibrant.
    • The amount of water needed will vary slightly depending on the shape of pasta you use. Start with enough to just cover the pasta.
    • Stir in the marinara only after the pasta has finished cooking. Cooking tomato-based sauces under pressure can sometimes affect the texture of the pasta.
    • Top with freshly grated Parmesan, a dollop of ricotta, or both for a creamy, satisfying finish.

    Turn the Instant Pot to Sauté mode and heat the oil.

    Add the garlic and onions and sauté until fragrant and the onions begin to soften.

    Add the vegetables of your choice and cook for 2-3 minutes.

    Stir in the pasta, salt, Italian seasoning, black pepper, and red chili flakes (if using).

    Pour in enough water or vegetable broth to just cover the pasta.

    Close the lid and pressure cook on High Pressure for 0 minutes.

    Let the pressure naturally release for 6 minutes, then carefully release any remaining pressure.

    Stir in the marinara sauce until the pasta is evenly coated. If needed, simmer on Sauté mode for 1-2 minutes to thicken.

    Serve hot topped with Parmesan, ricotta, or both. [Stovetop Method]

    Heat the oil in a large pot and sauté the garlic, onions, and vegetables.

    Add the pasta, seasonings, and enough water or broth to cover the pasta.

    Bring to a boil, then reduce to a gentle simmer. Cook for about 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid has been absorbed.
