  • 4small naan breads
  • (store-bought naan works great)
  • 2 cupsleftover Pav Bhaji, preferably thick consistency
  • (freshly made bhaji works too, but make sure it is not too watery)
  • ½ cuponion, thinly sliced or diced
  • ½ cupbell pepper, thinly sliced
  • ½ cupjalapeno rings
  • 1–1½ cupsshredded cheese

Notes & Tips

    • The most important thing is using thick Pav Bhaji. Regular Pav Bhaji meant for eating with pav is usually too loose and can make the naan soggy.
    • This is an amazing leftover makeover recipe. The flavors of Pav Bhaji actually get even better the next day!
    • You can use mini naans, pita bread, tortillas, or even a regular pizza crust.
    • For a restaurant-style finish, brush the naan edges with a little butter before baking.
    • Add jalapeños or chili flakes if you like a little extra heat.
    • Cheese brands vary a lot in vegetarian availability, so use whichever shredded cheese works best for you. A good melting cheese like mozzarella, cheddar, or a blend works beautifully.
