Vegetable (choose one):

  • 1medium head cabbage (about 6–7 cups), finely chopped
  • 4 cupsbottle gourd (sorakaya/lauki), peeled and cubed
  • 4 cupsridge gourd (beerakaya), peeled and chopped
  • 3–4 cupscluster beans (chikkudukaya), chopped into bite-sized pieces

Dal (choose one):

  • ½ cupyellow moong dal (pesara pappu), washed
  • ½ cupchana dal (senaga pappu), washed and soaked for 30 minutes
  • ½ cuptoor dal (kandi pappu), washed

Optional additions for texture:

  • ½ cupcooked black-eyed peas
  • ½ cupgreen peas
  • ½ cupcooked kala chana (black chickpeas)
  • Kootu Masala Podi (Roasted Spice Powder)
  • 2 tablespoonschana dal
  • 1 tablespoonurad dal
  • 1 tablespoonwhite rice
  • ¼ teaspooncumin seeds (jeera)
  • ⅛ teaspoonmustard seeds
  • ⅛ teaspoonmethi seeds (fenugreek seeds)
  • 4–5dried red chilies

Prepared Kootu Podi (from above)

  • ¼ cupfresh shredded coconut
  • ¼–½ cupwater, as needed for grinding

Tempering (Tadka / Thalimpu)

  • 1–2 tablespoonsoil or ghee
  • ½ teaspoonmustard seeds
  • ½ teaspooncumin seeds
  • 8–10curry leaves

A pinch of hing (asafoetida)

  • ¼ teaspoonturmeric powder
  • to tasteSalt
  • 2 tablespoonsfresh cilantro, chopped

Step by step

Method

    Cook the dal: Wash the dal and cook it until soft and creamy. You can cook it on the stovetop or in an Instant Pot until it easily mashes with a spoon.

    Prepare the Kootu Masala Podi: Heat a dry pan on low-medium heat. Roast the ingredients for the Kootu Podi slowly, adding them in order based on how quickly they roast: chana dal, urad dal, rice, cumin seeds, mustard seeds, methi seeds, and dried red chilies.

    Roast until aromatic and lightly golden. Allow the spices to cool, then grind into a fine powder.

    Make the masala paste: Add fresh coconut and a little water to the Kootu Podi. Grind into a smooth, thick paste.

    Cook the vegetables: Add your chosen vegetables to a pot with water and salt. Cook until tender but still holding their shape.

    (For cabbage, cook uncovered or partially covered so the cabbage does not become overly watery.)

    Combine the kootu: Add the cooked dal and prepared Kootu Masala Paste to the vegetables. Mix well and simmer for 5–10 minutes until everything comes together into a thick, creamy consistency.

    Add optional bite ingredients: Stir in cooked black-eyed peas, green peas, or kala chana and allow them to warm through.

    Prepare the tempering: Heat oil or ghee in a small pan. Add mustard seeds and let them splutter. Add cumin seeds, curry leaves, hing, turmeric, and cilantro.

    Finish the kootu: Pour the tempering over the kootu and mix well.

    Serve: Serve hot with steamed rice, rasam, and a side of pickle or papad.

    Kootu is a traditional South Indian vegetable and dal preparation that sits beautifully between a dal and a vegetable curry. The beauty of kootu is that there is no single fixed recipe — the basic structure stays the same, but the vegetables, dal, and spices can change based on the region, season, and what is available at home.
