Notes & Tips

    • This coconut milk-based curry can be made with almost any squash-family vegetable. Bottle gourd is the classic choice here, but ridge gourd, chayote, and butternut squash all work beautifully.
    • The coconut milk gives this simple curry a naturally creamy and comforting texture without needing any additional thickening.
    • Steaming the vegetable beforehand makes this recipe faster and easier, especially for a busy weekday meal. The Instant Pot is a great option because it reduces active cooking and cleanup.
    • Add coconut milk at a gentle heat and avoid aggressively boiling it for a long time to preserve its creamy texture.
    • This curry is especially delicious with hot rice, but it also pairs wonderfully with dosa.

Step by step

Method

    Peel and cut the bottle gourd (or squash of choice) into cubes. Steam until slightly tender. You can do this in the Instant Pot for convenience or cook it separately on the stovetop.

    Heat oil in a pan. Add mustard seeds and allow them to splutter. Add cumin seeds, urad dal, chana dal, curry leaves, green chilies, and dry red chili, waiting about 20-30 seconds between additions so each ingredient roasts properly.

    Lower the heat and add the grated ginger. Sauté briefly, making sure the ginger does not burn.

    Add the onions and a little salt. Cook until the onions begin to soften.

    Add the coconut milk and enough water to create a light, soupy consistency. Mix well and add hing.

    Add the steamed bottle gourd pieces and gently mix everything together.

    Cover with a lid and cook on low heat for about 10 minutes, allowing the flavors to combine. Keep an eye on the liquid level and add more water if needed to prevent sticking.
