- 2packs ramen noodles (use noodles only; discard seasoning packet)
- 8 ozextra-firm tofu, cubed
Vegetables
- 1 cupcabbage, thinly sliced
- 1medium carrot, julienned
- 1 cupbroccoli florets
- 1bell pepper, sliced
- 1 cupsnow peas
- 1small zucchini, sliced
Miso Broth
- 1 tablespoonsesame oil or any cooking oil
- 3garlic cloves, minced
- 2 tablespoonsred or yellow miso paste
- 2 cupsvegetable broth
- 1 teaspoontamari (or soy sauce)
- ½ teaspoonsesame oil
- —Chili flakes or chili oil, optional

Method

Press and cube the tofu. Sauté until golden and set aside.

Cook ramen noodles according to package directions. Drain and set aside.

Heat sesame oil in a pot. Add garlic and ginger and sauté until fragrant.

Add vegetable broth and bring to a gentle simmer.

In a small bowl, mix miso paste with a few tablespoons of warm broth until smooth.

Reduce heat and stir the miso mixture into the broth. Avoid boiling after adding miso to preserve its flavor.

Add carrots, cabbage, and optional vegetables. Simmer until vegetables are tender.

Add tofu and cooked noodles. Warm everything together for 1–2 minutes.

Top with sesame seeds, chili oil, lime, and green onions.
