- Kandhi Pachadi is one of the simplest and most comforting Telugu accompaniments — the flavor comes entirely from properly roasted toor dal, jeera, and red chilies.
- The key step is roasting the toor dal slowly. A well-roasted dal gives the pachadi its signature nutty flavor and aroma.
- Add tamarind carefully — it should balance the roasted dal flavor, not overpower it.
- This pachadi is intentionally simple and does not use garlic, onion, coconut, or fresh herbs.
- A classic way to eat this is mixed with hot rice and a generous spoon of ghee. It also pairs beautifully with dal, rasam, or a simple vegetable kura.

Method

Heat a pan on medium flame. Dry roast the toor dal slowly until it turns golden brown and becomes fragrant.

Add cumin seeds and dried red chilies and continue roasting for another minute. Be careful not to burn the spices, as they can turn bitter.

Remove the roasted mixture from the pan and allow it to cool completely.

Add the roasted dal mixture, tamarind, and salt to a blender.

Grind into a coarse or smooth powder first, depending on your preference.
