Vegetable Base

  • 1large onion, thinly sliced

Notes & Tips

    • Kakarkaya can be naturally bitter, but the bitterness can be balanced without removing all of its character. The goal is to reduce the bitterness, not completely eliminate it.
    • The salt-resting method is one of the easiest ways to remove excess bitterness. Squeezing out the released water helps remove some of the bitter compounds.
    • Choosing fresh kakarkaya makes a big difference — look for firm, bright green bitter gourds without soft spots.
    • Onion is an important part of this version because its natural sweetness balances the bitterness of the kakarkaya.
    • For a richer Andhra-style variation, add a spoon of roasted peanut powder, sesame powder, or fresh coconut at the end.
    • This kura pairs beautifully with hot rice, ghee, and a simple dal.

Step by step

Method

    Wash the kakarkaya and slice them thinly. Remove the seeds if they are large and mature. Small, tender seeds can be left in.

    To reduce the bitterness, sprinkle salt over the sliced kakarkaya and mix well. Let it sit for 20-30 minutes until it releases water.

    Squeeze out the released water from the kakarkaya pieces. You can rinse them once if you prefer a milder bitterness, then drain well.

    Heat oil in a pan. Add mustard seeds and allow them to splutter. Add cumin seeds, urad dal, chana dal, curry leaves, and hing.

    Add sliced onions and sauté until they become soft and slightly golden.

    Add the prepared kakarkaya pieces and sauté well.

    Add turmeric, red chili powder, coriander powder, cumin powder, and salt. Mix everything together.

    Cover and cook on low heat until the kakarkaya becomes tender. Stir occasionally and add a splash of water only if needed.

    Remove the lid and cook for a few more minutes until any extra moisture evaporates and the curry develops a slightly roasted texture.

    Add jaggery/bellam if desired, mix well.
