Chutney Base

  • 2 cupsfresh cilantro leaves and tender stems, washed
  • 1 cupfresh mint leaves, washed
  • 2–3green chilies (adjust based on spice preference)
  • 1 inchginger, peeled
  • 2 tablespoonsroasted peanuts or soaked and peeled almonds (optional, for a creamier chutney)
  • 1 teaspooncumin powder
  • ½ teaspoonchaat masala
  • to tasteSalt
  • Juice of 1 lemon or lime

Blending

  • 2–4 tablespoonswater, as needed to blend

Notes & Tips

    • This chutney is incredibly versatile! Mix it with mayo to make a delicious cilantro mayo that goes amazingly well with sandwiches, burgers, wraps, fries, roasted vegetables, and so many other things.
    • You can make a big batch and freeze it in jars or freezer-safe containers for up to 6 months. Thaw as needed and adjust the consistency with a little water if required.
    • Want to make pani puri water? Simply dilute this chutney with water and add pani puri masala. Adjust salt, spice, and tanginess to your preference for an easy homemade spicy pani.
    • For a smoother, restaurant-style chutney, strain it after blending. For everyday use, keeping the fiber gives it more flavor and texture.

Method

    Wash the cilantro and mint thoroughly and remove any thick stems.

    Add cilantro, mint, green chilies, ginger, peanuts/cashews (if using), cumin powder, chaat masala, salt, and lemon/lime juice to a blender.

    Add a little water and blend into a smooth chutney.

    Taste and adjust:
