Notes & Tips
- This is inspired by Indian street-style pasta, where Italian pasta is transformed with bold Indian flavors, sauces, and spices.
- The combination of tomato sauce, Maggi Hot & Sweet sauce, and Maggi masala creates the signature street-style flavor.
- Adding mayo at the end gives the pasta a creamy texture similar to the versions commonly found at Indian street stalls. Plant-based mayo works well too.
- Adjust the spice level based on your preference — the Maggi sauce and masala already add salt and flavor, so taste before adding too much extra seasoning.
- This recipe is very flexible — use whatever vegetables you have available for a quick weekday meal.

Method

Cook the pasta according to package instructions until al dente. Reserve a little pasta water before draining.

Heat butter in a pan. Add chopped garlic and sauté until fragrant.

Add onions, bell peppers, and corn. Sauté until the vegetables soften slightly while still keeping some texture.

Add pasta sauce, Maggi Hot & Sweet Tomato Chili Sauce, Maggi masala, salt, red chili powder, and oregano or Italian seasoning. Mix well.

Add a splash of water or reserved pasta water to loosen the sauce and bring everything together.

Add the cooked pasta and toss until every piece is coated with the desi-style sauce.

Turn off the heat and mix in butter and mayo for a creamy, street-style finish.
