Rice
- 1 cupuncooked rice
- 2 cupswater (for cooking rice)
- 1 teaspoonoil (optional, helps prevent sticking)
Coconut Mixture
- ½ cupfresh or frozen shredded coconut
- 3 tablespoonsoil
- 3green chilies, slit
- ½ teaspoonsalt (adjust to taste)
- ½ teaspoonsugar
Optional:
- —Small pieces of fresh coconut for extra texture
Tempering
- ½ teaspoonmustard seeds
- ¼ teaspooncumin (jeera) seeds
- ½ teaspoonurad dal
- 1 teaspoonchana dal
- 10-12cashews or peanuts, broken into halves or pieces
- 1sprig curry leaves (fresh or dried)
- ¼ teaspoonhing (asafoetida)
Notes & Tips
- Fresh coconut gives the best flavor, but frozen shredded coconut works perfectly well too.
- If using frozen coconut, thaw it slightly before adding it to the pan so it cooks evenly.
- The little bit of sugar helps balance the coconut flavor and enhances the overall taste — it will not make the rice sweet.
- For extra texture, add small coconut pieces along with the shredded coconut and lightly toast them.
- This rice tastes even better after resting for a little while because the coconut flavors have time to absorb into the rice.

Prepare the Rice

Wash the rice thoroughly until the water runs mostly clear.

Cook the rice with:

Once cooked, allow the rice to cool slightly and fluff gently before mixing.

Prepare the Coconut Tempering

Heat half of the oil in a pan over medium heat.

Add mustard seeds and allow them to splutter.

Add cumin seeds and chana dal. Roast until the chana dal begins to turn golden.

Add urad dal and sauté for a few seconds.

Add cashews or peanuts and roast until golden brown.

Add the remaining oil, curry leaves, hing, and slit green chilies.

Once the chilies splutter and become fragrant, add the shredded coconut.

Add salt and sugar. Sauté gently for 2–3 minutes, being careful not to burn the coconut.
